Here is a simple recipe which tastes like cheesecake filling but is very low in carbohydrate. It's good served with fresh strawberries. Maybe you can figure out a way to make a crust and serve it as cheesecake. Perhaps a crust made of chopped walnuts?
16 oz nonfat sour cream
8 oz cream cheese
1 heaping cup (24 packets) sucralose-based sweetener (Splenda or a generic brand)
1 heaping tsp lemon juice
OPTIONAL: vanilla extract
